Instructions

  1. Heat oil in a large pot over medium heat. Add onion, carrots and celery, and sweat until soft, about 5 to 7 minutes.
  2. Add garlic and cook 30 seconds until fragrant, stirring to avoid burning.
  3. Pour in the broth, then add thyme or cumin. Bring to a simmer and cook for 8 to 10 minutes so the flavors meld.
  4. Stir in the shredded rotisserie chicken and spinach, and warm gently until the spinach wilts and the chicken is hot.
  5. Remove from heat and finish with a squeeze of lemon or lime and chopped herbs. Taste, then adjust salt and pepper.
